Knowing how to correctly grill meats is one of the most essential skills for alfrescocooking. Whether you’re cooking country-style ribs, burgers, chicken or seafood, we guarantee that you’ll be cooking like a seasoned pro with this handy meat guide.
Beef
Beef products are a popular option for grilling as they’re meaty, flavourful and filling. Depending on the thickness, beef products should be cooked on direct heat at a high temperature.
Steaks can be grilled on medium heat, but just be mindful that it’s easy to overcook steaks if you’re not paying attention. To perfect a medium-rare steak, cook it for approximately 2 minutes each side.
A handy tip to keep in mind is to make sure you use tongs and not a fork when cooking beef. This is because you run the risk of piercing the meat and letting the juices escape if you use a fork, which lessens the overall flavour.
Pork
Pork, like beef, cooks best over direct heat but the temperature can be lowered depending on how thick the cut is. Thinly cut pork chops can be cooked for around 2 to 4 minutes per side.
We suggest brushing the surface of the pork with oil to prevent it from sticking to the grill. Brush oil on the grate itself as well. When grilling multiple cuts at the same time, evenly place them on the grill and avoid overcrowding. Generally, it’s best to turn the cuts only once. You should also make sure that each side is nicely browned before removing it from the heat.
Chicken
Grilling chicken takes a bit more time. As chicken dries out easily, it should be grilled over a medium heat. To prepare chicken for grilling, it’s best to marinate it overnight to keep it moist before cooking. Also be mindful that if you’re cooking a part of the chicken that has more bones, it’s going to require more time to cook.
Differently to lamb and beef, chicken must also be completely cooked to be safe for consumption.
On average, boneless and skinless chicken breasts take around 8 to 12 minutes to cook over direct medium heat and a whole chicken takes around 2 hours over indirect medium heat.
Seafood
Who doesn’t love fresh cooked seafood? When cooking seafood, we suggest using plenty of cooking oil or butter to keep the fish from sticking. Most fish need less than 10 minutes to cook, so make sure you keep watch so that you don’t overcook it.
