Grilled Calamari Salad
Want to take your salad to the next level? Throw some barbecued calamari on there! This dish is packed with fresh veggies and squid, giving you all the essential nutrients, you need.
Here’s what you need:
- ½ Iceberg lettuce, coarsely shredded
- ¼ Red cabbage, finely shredded
- 1 Large Lebanese cucumber, cut lengthwise and sliced
- 100g Snow peas, blanched and refreshed
- 800g Calamari tubes
- 2 French shallots, finely diced
- 1 Tbsp minced ginger
- ½ Tbsp chopped chilli
- ½ Tbsp minced garlic
- 1 Tbsp chopped lemongrass
- 2 Lemons, quartered
- Sea salt and fresh ground black pepper

Tropical Seafood Mixed Grill
Seafood lovers, this one’s for you! Our mouth-watering seafood platter combined with tropical fruits is the perfect lunch to satisfy your cravings. And the best part? You can cook it up on your BBQ grill in just ten minutes!
What you need:
- 12 Half-shell scallops
- 12 Raw king prawns, shell on
- 2 Raw Moreton Bay bugs, halved and cleaned
- 2 Squid tubes
- 1 Small pineapple, quartered and sliced, skin on
- 2 Large mangoes, skin on, seed cut out and flesh scored
- 4 Nectarines, seed cut out
- 4 Yellow peaches, seed cut out
- 2 Red chillies, finely diced
- 2 Limes juiced
- Sea salt and fresh ground black pepper
- Olive oil

- 4 pieces White fish fillets
- 1 clove Garlic minced
- ½ tbsp Extra Virgin Olive oil
- 1 tbsp Butter
- 1 Lemon Extra Virgin Olive oil
- Salt and pepper to taste
Tomato Salsa
- 4 Ripe vine tomatoes diced
- 2 tbsp Extra Virgin Olive oil
- ½ clove Garlic minced
- Salt to taste
